The entry in `tex--prettify-symbols-alist' mapping \varsigma to ς is not
a degenerate pair, but rather a list (i.e., ("\\varsigma" . ?ς) vs
("\\varsigma" ?ς)). This is still an issue on master.

Yup.  I've now pushed a fix for this to Emacs 28.
